Ingredients

  • 3 tablespoons butter, plus extra for casserole dish
  • 2 tablespoons all-purpose flour
  • 1/2 pound shiitake or baby bella mushrooms, sliced
  • 1/4 cup onions, chopped
  • 2 cloves garlic, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken stock
  • 1 (10-ounce) box frozen chopped broccoli, thawed and drained
  • 2 cups shredded Cheddar-Monterey blend
  • 3 cups cooked rice
  • Salt and freshly ground black pepper
  • Special equipment: 1 1/8-quart oval casserole dish

Directions

Preheat oven to 425 degrees F.

Butter casserole dish. In a large pot, melt 3 tablespoons butter and flour over medium heat until golden in color to make a quick roux. The roux should resemble the color of peanut butter. Add mushrooms, onion, garlic, garlic powder, cayenne pepper, heavy cream and chicken stock. Add broccoli, 1 cup of the cheese and rice. Season with salt and pepper, to taste. Pour into buttered dish and top with remaining shredded Cheddar. Bake until cheese is melted and golden, about 20 minutes.

    I substitute this recipie with a can of cream of mushroom soup and a can of chicken broth, I keep everything the same and... added an extra cup of cheese in the mix and topped with cheese. Bake . OMG!!!!!!!! We love it! Thanks SunnyRead more

    Easy weeknight dinner

    I made this tonight for my husband and I and we both really enjoyed the dish. We had a huge bag of fresh broccoli and a... large container of fresh white mushrooms from Costco that we needed to use before they went bad. I searched for a recipe that would work with these ingredients and this dish came up. I ended up using beef stock rather than chicken stock but you couldn't tell a difference. I also made brown rice which was very good in the dish. I don't have a high tolerance for spicy foods and I found this dish just perfect with the amount of cayenne pepper called for in the recipe. I will definitely make this again. It came together nicely and the flavor was good. My only issue was that it calls for salt and pepper to taste but I would have preferred a suggested amount. I put in about 1 tsp of salt and it definitely needed more once the dish was served, otherwise it was great!Read more

    Great flavor, but a bit too busy.

    For me, this is a great dish, and I made it originally just as it says and loved it, but for other people, it has a bit too... much cayenne and garlic. I have reduced the garlic by dropping the garlic powder, and keeping just the fresh garlic. I also reduced the cayenne by half to 1/4 teaspoon. This seemed to be quite a bit more palatable to everyone else. At 1/4 teaspoon cayenne, you still feel the heat a bit, but it's not too strong for children. If you like garlic and cayenne and the tastes of the people sharing it with you are similar, it is a great recipe as it is, but if you plan on feeding it to people that may have trouble with spicy food or garlic, a couple simple changes make it perfect.Read more

    Pretty good but too spicy for my kids

    I think this was a pretty good dish. The only thing I did differently was use whole milk instead of cream. I was a little... skeptical about the 1/2 tsp cayenne but put it all in anyway and I think it made it a touch too spicy. I love spicy foods but my 3 year old, who will eat pretty much anything, wouldn't eat it saying it was too spicy. I also think, despite the cayenne, there was something bland about it, just something was missing. However, that said I will most likely make it again but with a few tweaks. Read more

    Made it into a casserole...

    I would imagine this would be phenomenal as is, but I was looking for a complete dinner, so I added a few things... I... added: 2 chicken breasts cubed (I browned the chicken, partially cooking it before adding it) 6 slices of bacon - chopped, fried and drained of fat 1/4 cup extra onions 1 head of fresh broccoli (stems & florets) I wanted to cut the fat a little, so I used 1/2 c 2% milk and 1/2 extra broth and cut the heavy cream to 1/2 cup. Turned out great both times I made it. The kids inhaled it and my husband said it blew my usual casserole(the friend/family favorite) out of the water. Read more
